Challenge/Opportunity
A Northeastern bakery was looking to develop a whole grain muffin with mainstream appeal. The finished muffins would be sold in upscale coffeehouses and needed to have a taste and texture that would appeal to both children and adults.

Solution
Bay State Milling’s R&D department worked closely with the bakery. Together, they developed a Grain Essentials™ White Whole Wheat Muffin base that has the great taste and smooth texture of a traditional muffin, along with the health benefits of whole grain.

Results
The bakery was able to capitalize on the expertise of Bay State Milling’s R&D department, and is enjoying strong sales. Its product line has been extended to accommodate the trend toward healthier eating, customers are thrilled with the taste and margins have improved due to the muffin’s premium product positioning.
